Dark chocolate bark with chickpeas, hazelnuts & sea salt

If you are like me, a truly fan of chickpeas and chocolate, you are going to love this recipe! Chickpeas look like a bit of hazelnuts don’t you think? Once smothered with dark chocolate, it becomes impossible to tell them apart. Then, when you bite into this bark, you never know what you’re going to get.

 

Ingredients

    • 1 cup cooked or canned chickpeas
    • 1 tsp coconut oil
    • ½ hazelnuts, soaked
    • 1 cup dark chocolate
    • ½ tsp sea salt

Preheat oven to 180°C.

Rinse chickpeas and dry them with a clean kitchen towel.

Place them in a tray and coat with coconut oil. Cook for 20 minutes, shaking tray halfway through to rotate beans. After 20 minutes, add hazelnuts to the tray. Bake for 10 minutes, until golden brown. Remove from oven and set aside.

Meanwhile, place chocolate in a heatproof bowl and put in a pot of gently simmering water. Allow chocolate to slowly melt, stirring often.

Once melted, add roasted chickpeas and hazelnuts to the bowl and coat completely with chocolate. Spread onto a parchment-lined baking sheet, ensuring all the chickpeas and hazelnuts are flat. Sprinkle with sea salt.

Place tray in fridge and cool until the chocolate is solid, about 30 minutes. Cut or break into pieces.

Option: add a pinch of chili or ginger powder
