Banana bread

I usually make banana bread when my bananas are too ripped. However, to get a lower FODMAP banana bread, I’d rather use unripe bananas.

Banana bread is perfect for breakfast or as a snack.

 

Ingredients:

      • 2 eggs
      • 1/3 cup ground hazelnuts
      • 1/3 cup chopped peanuts or macadamia
      • 3/4 rice or buckwheat flour
      • 2 tsp baking soda
      • 1/3 cup cornstarch
      • 1/4 tsp salt
      • 1/2 tsp cinnamon
      • 1/4 coconut oil
      • 1/3 cup whole sugar or maple syrup
      • 3 small, unripe bananas
      • 1 tbsp lemon juice

 

Mix together flour, baking soda, salt, cinnamon, ground hazelnuts and starch.

In another bowl, combine oil, eggs, crushed bananas and lemon juice. Add to the previous mixture and mix. Add the chopped peanuts and pour in an oiled pan.

Bake at 180°C for 40min. Let it cool before unmolding.
